Developed in the last year of the Clone Wars, the Viper-Class Probe Droid, otherwise known as a Probot, has a reputation for being a viable and reliable probe droid model. The Vipers became heavily used by the Empire, using them as advanced scouts or using them to aid in patrolling civilian districts. Some Vipers were refit for more scientific means such as forensic analysis. It wasn't uncommon to see several probe droids on site at a crime scene, helping to analyze the scenes. On occasion, the Vipers were used in a light offensive role. On Tatooine, shortly after the Battle of Yavin, a small number of Probe Droids were dispatched by the Empire to attack some of the surrounding homesteads near Mos Eisley Spaceport. These droids were destroyed thanks to the timely presence of Rogue Squadron. More probe droids were used by the reclusive Moff Rebus in defending his secret base on Anoat. In 3 ABY, the Empire deployed thousands of probe droids to scour the galaxy in order to locate the Rebellion's main base. One such probe droid found the Rebel base on Hoth. The Rebels discovered the droid's presence too late as it had already transmitted the base's location to the Empire, leading directly to the Battle of Hoth. After the Fall of the Empire, the New Republic came into the possession of a large quantity of the droids and have tentatively continued using them, a testament to the Viper's effectiveness. The 501st Legion similarly uses the Viper droids. Outside of military use, the probots are sometimes used for planetary surveys. Some disused Probots have been reprogrammed for various duties such as salvage, repairs, and sometimes even resource gathering.
Probots are equipped with a wide array of sensors and scanning equipment. Their array of photoreceptors give them a full 360 degrees of visual coverage across multiple spectrums such as infrared and night vision. Their multiple manipulators have made them ideal for surveys and various geological tests. Military models are typically armed with only a small blaster cannon for defense but when capture appears likely, they trigger a self-destruct that vaporizes their databanks, preventing the information from being salvaged.
Because the model is so versatile, after the Empire, Arakyd Industries started offering specially repurposed probots for a variety of roles such as construction, salvage, repairs, mining, and in at least one notable occasion, women's hairstyling. Additionally, the Viper was popularized in a pro-Rebellion/New Republic Holo-cartoon series as a reoccurring villain named "Viper."

I remember having a toy Viper as a kid. The head was mounted on what looked like a nasty looking dual barreled cannon

I had one too. Except when you pressed a button the head popped off. It was to simulate the droid being blown up.

I always wondered why the Viper sent to Hoth self-destructed when there was only Han and Chewbacca

Same reason spies take cyanide pills when cornered. To avoid capture and prevent their secrets from getting out.
