Well Galvan's art is in the book he at the front page the first piece you should see unless you skip his page by mistake. Galvan just has no role in the adventure.
This guy here however is not in the book at all. His art does not even show up. I saw Jared Blando's maps online and they featured an unused one that looked like a frost giant encampment.

Hm... well, not sure about the book itself as I'm just a player and not a DM, but in my Rise of Tiamat game I'm playing my DM used this art for a giant named Blagothkus. He ruled a flying castle and was allying with the primary antagonists thinking they were going to return the world back to one in which giants would rule again. My party managed to convince him to turn against them.
