I'm a little confused with the logo, do we just pick a random one and smack it on the saddle? Or is there a specific one to use?

You don't need to include a logo/brand at all if you don't like; this is purely for saddle example purposes at this point

No, you can design whatever you feel like These are just standard breed examples if you want to follow the traditional tack.

  if you draw a picture kinda like this fav.me/d1f11q4 of your nordanner would it still count as fullbody?

It shoooould be, so long as more of the horse is showing vs what is hidden it ought to be full body--so since you can see head & neck, back and everything all you're missing is the frong of his chest and some front leg. Now if you hide half of what IS showing behind a rock or a tree then it wouldn't be full body.
