Since I've been drawing my OCs for minecraft, I decided to make a reference sheet for them in the future.If you want to use this ref sheet template for your minecraft character here are the rules:

What is the circle for on the top right? I saw in your gallery it was used for a sort of water element symbol, do you have any suggestions what it could be for on a character who isn't elementally-oriented?

Sure you can use it.
As for the circle it's used for a character's own symbol or faction they're in. For example: Sephia, the water mage, is from a faction called Sentinels of the sea, and their faction symbol is a water symbol.
If your character doesn't a symbol of their own or not in a faction, you can leave the circle blank if you wish. Or just add your favourite block to the circle, like diamond block. But if you want your character to have a element symbol, feel free.

Well if you have a paint SAI you can use a line tool and then color it.
Take a look at this as an example:

It's for the character's symbol. You don't have to make a symbol if your character if you don't want to
