Yeah, there's The Rescuers Down Under. But that was a sequel to the Rescuers. If you wanted to make a story set in Australia, I can think of three possibilities.
1. The Dreamtime mythology. This mythology is one of the oldest and richest in the world, revolving around magic, trickery and quests to slay terrible creatures. You have countless stories to choose from this mythology, ranging from the Earth's very Creation (caused by strange beings that shaped the very Earth through magic before disappearing into the rocks, trees, animals and people), to the story about the Giant Devil Dingo that explained how the titular Dingo became domesticated as mankind's assistant, to the Rainbow Serpent swallowing up the Earth whole, to the legend of the Three Sisters Mountain, and so much more.
2. Pre-Modern Australia. This is a very broad term covering the White Man's arrival to Australia, from Captain Cook's arrival in 1770, to the days of the Bushrangers bailing up rich folk, to the Eureka Riots, to the country's involvement in both World Wars, and other events.
3. Post-Apocalyptic Australia. This is my favourite possibility, since to my knowledge, Disney has never tackled a story about a world reborn after an apocalypse. Zootopia might count, but that hasn't been confirmed beyond being a wild theory. But this would present a new stage to retell old stories in an all new environment. Raider gangs, natural disasters, freakishly mutated wildlife, technology cobbled together from what was left of the old world, mysteries about what happened to the old world, pick your poison and it will be there.

You could do some amazing things with the Dreamtime Creation mythos. Think the Firebird from Fantasia 2000, but with an almost alien feel.
