May I ask what ounce of leather you are using when you make this stuff and how do you finish the edges off so well?

I use different oz of leather for different parts. The armor pieces are 8-9oz leather, and the straps are 3-4 oz.
For the edges, I'm adding a stitch line, beveling, then do a quick burnishing to round it out a bit. I don't need a really great edge, just a semi-finished edge to make it smooth.
