I sticky jump and rocket jump in dustbowl all over the place, it's hilarious!

That actually happend to me a few times,just that it was a Demoman.

I alway see Soldiers get stuck super high up after rocket jumping and sometimes Scouts but rarely Demoman.

That's not the case with the Sticky Jumper. You can launch yourself so high up, you touch the ceiling of the skybox for a couple of seconds.
The only reason you can't do it with a regular sticky bomb is because demoman can't withstand the explosions of more than two mines.
