You use both ends, so it doesn't matter.

ha! to think i'd be duped by those 'free tips' websites that ply their wares at you and keep all the goodies to themselves *huffs* thank you for this tutorial!! good ol' DA's full of kind hearts i'll tell if it works for me when i start knitting

You don't use it. When you're done you can weave it into your project to prevent it from unraveling. Also sometimes on things like shirts you use the extra string to sew all the different parts together.
