Each one of the 300+ rooms in this abandoned castle was mind blowing. Every tiny little corner was painstakingly detailed and unique.------------------

Do people patrol castles sometimes and kick people out or do cops usually leave those places alone?

Trespass is a civil offence in most European countries meaning that any dispute is between the landowner and the trespasser. Police don't want to waste their time and resources on private matters. Even the countries where it's a criminal offence (like Germany) the police view it as low priority unless there is clear evidence of other criminal intent such as burglary or vandalism.
For this reason, it's down to the landowners to secure and protect any vacant property... Which they obviously want to do as cheaply as possible, so generally there's not usually a guard on site as this is a huge cost. They may check on the property a couple of times a week though to make sure that it's still secure. Some countries (like Poland) where its relatively cheap to employ guards, it's often possible to bribe them... Mostly because of the low wages.
Saying that, there's almost always a massive oversight on their part with regards to security. I've never broken into anywhere, either there's a way in via climbing or squeezing through a tight space or if not then I just leave it.
I've only ever had police show up a handful of times, and every time they've left happy after just a 10 minute chat when they realise our intentions are purely benign.
