Even though SatAM was Sonic in name only, the people there put a lot, a LOT of effort into the characters. There's tons of concept art revolving about Bunnie, Rotor, Antoine and especially Sally. They worked hard on it and even though the show aged poorly, it still has a lot of heart and you can see the hard work they put into it.
I actually own official concept art of Sally that portrays her as a Hedgehog which I keep in my cupboard. It was drawn on an animation cell. You can still find a lot of concepts to buy on Ebay.

I am so much more invested in the SatAM cast than I will ever be with the "SEGA" characters. I have no interest in the new games or show, it just doesn't appeal to me. :/

I hadn't seen those particular prototypes, but they do somewhat resemble the inaccurate designs that the Archie Comic versions started off with, so I'm not surprised!
