Spyro the Dragon is seriously the best PS1 game ever, hands down.
... It was basically the only PS1 game that I played obsessively.

I've been working on completing all three of them as well, haha
I'm sooo close with being finished with the first one, but god, im still missing a LOT of gems..

I had to restart one of my games because I'd gotten every gem but one and no matter where I looked I could not find the one stupid gem
in short: gems are terrible ;;

And I've also gotten pretty close to completing the 3rd one, but the disc had a glitch and ended up erasing all my game's data...
So yeah, those games can give you QUITE A HARD TIME.
But, despite that, they are so worth it.
