Quite simple really. Let's see...Link and the Master Sword - The Blade of Evil's bane. It can seal Salem away.
Ragna the Bloodedge - Existence Erasure and Soul Absorption.
Doctor Fate - Do I really need to explain?
Velvet Crowe - Same reasons as Ragna.
Alex Mercer - Can absorb her.
The Belmonts - Salem is basically like Dracula.
HeavenΒ AscensionΒ DIO - Reality Overwrite.
Ultron - Can infect her and assimilate her.
In other words Ozpin, there are a lot, a LOT of ways. There are still more, too.
(Yes I know non of them are canon to RWBY, but I couldn't help myself.)

Salem is immortal, as seen in Vol 6 Chapter 3, after her fight against the Reincarnated Ozma, we see her body glow from the spot were she got incinerated by Ozma. Salem was incinerated twice by the Dark God and by Ozma.

Not sure this counts but it was said she is immortal but it's never implied that she has regenarative ability's so you can just cut her arms leg and head move them somewhere else or just the easy solution put her in outer space it worked on Kars so it should work on Salem

Ren Amamiya/Akira Kurusu- doesn't even have to use his most powerful Personas, they're already that powerful, use the ultimate Personas of any Arcana for more stomps, Satanael for maximum stomping.

Monado III- cuts gods in half. Pretty sure it can work for immortal people like salem
Hakai- Worked with zamasu so it can work with salem too; if there is no meat shields to grab of course.

Master Roshi- can use the Demon containment wave to seal her up
Garlic Jr- Can seal her away in the Dead-Zone.

Literally so many other characters in fiction can defeat Salem in a few seconds.
The only problem is, if those powers were in RWBY, the whole thing would be over in less than a Volume.

I want to say the regen thing would help him, but not too sure. I just chose him because I already had Ultron as the Marvel character, and didn't want another with Carnage.

Doesn't need to. His insanely high speed advantage and from what I've seen from Salem's abilities, she can't destroy him completely. All Carnage needs to do is land one direct hit, and then he can control her. And considering he was able to control freaking THANOS...

No. The speed gap isn't as huge, and Carnage has no way to see Lucy's attacks.
