Hi, I'm having an issue where if I put the timezone adjustment to 0 (instead of -7, +7, etc.) the sun/moon icon disappears, even though its on the correct time.

That's a built-in feature (actually just a quirk of maths but you get the idea). I made it that way so the second dial can be disabled. I don't know what else you'd be trying to achieve by setting it to 0.
Or does the main dial disappear too, leaving none visible? Sorry but it's been ages since I've worked on these things, I can't be of much help anymore.

I would like to remove the dial for the time. Could you tell me how to remove that please? I love the skin otherwise. It's amazing

You mean the hour dial in the background, the thing that doesn't move? If so, right-click the clock, click Edit Skin, find and remove this block of code around line 120, save and refresh the skin:
