You should try your hand at doing the septon during Eddard Stark's execution at the Great Sept of Baelor the Blessed. In the books, he wears this huge crystal crown that splits the light prismatically, with rainbows all around him.
Almost no-one has painted that character or that scene, despite it being iconic.
