Oh, and maybe in the end copy+merge all the layers, create a new one on top and do some additional work on it.

I sometimes do, but it takes a lot of extra work, so I prefer to save some time with separate layers or, if I color on one layer, with pre-made selection layers, it takes some time to set up, but in the process I don't need to select same things over and over again.
