Your little Papyrus voice is the most adorably shrill thing ever and I just love it. I know you've been going through some rough stuff lately, so don't worry about us if you need a break; we'll be right here waiting when you're ready to get back into the groove!
Also, real talk: does this simple shading style look better than my more detailed one? It's less visually interesting but I think it suits my cartoony style better... what do you guys think?

this looks good with the style of shading you chose to use! simple, minimal, and clean works well in a lot of drawings.
any coloring style can be used for any sort of drawing style, it's definitely up to you what you choose to use. If you prefer to not spend a lot of time coloring, simple is fine. But I do have to say that you might want to change the way you color in the background if you're choosing to use the same simple style for both of them especially because it seems like both sans and papyrus seem to almost blend in to the background and not really pop out. Changing the variety of your line depth helps with making them easier to pop out, try thicker lines or use more variety in ur lines.

I am very aware that I need to work on how I draw backgrounds, it's always been one of my weaker points... do you have any other tips on how I can make the characters pop?

both are good but yes, it's good to get some feedback on what can be worked on!
backgrounds are pretty hard, you should try taking a look out shows or comics that are close in style to the way you do art. Steven Universe comes to mind because of simplicity, and the backgrounds remain simple too but it's the lack of black lines and the use of palette that makes the characters in the show pop out and not blend into their environment. Old anime avoided blended in characters by having characters defined by blacker lines and simple coloring but having backgrounds be more complex and early Pokemon even has watercolored backgrounds. i would advise just to look at shows you personally take inspiration from and trying to do something similar to what they do.

Yeah, I like this more simplistic, cartoony shading style. After all, as certain people have told me concerning my drawing and my cartoony style (Phineas and Ferb-inspired). You don't need to be highly-detailed. If anything, that makes certain styles seem too conflicting. Like coloring something with both marker and crayon. It just doesn't work. Or, doesn't work as well, best-case scenario. Short answer, keep more simplistic shading. It'll take you less time, and will make your drawings pop out a little more (unless you're going for something morbid, or otherwise meant to be particularly gritty or emotional, then please, use high-detail drawing).
