In the Smashverse it was Chun-Li, not Ryu, who defeated Bison in A Shadow Falls.

While Charlie sacrificed himself to weaken Bison, Chun-Li destroyed the new Psycho Drive. Bison could feel his strength continue to fade from the loss of his weapon. Realizing what a mistake it was to leave Chun-Li alive for so long he vowed to finally kill her.

Even in his weakened state Bison was still a formidable foe. Chun-Li trained herself for years, pushing past her limits over and over. No matter what she did, whenever she faced Bison she could never defeat him.

This time it was different. Chun-Li could see that with the damage took against Charlie and without the Psycho Drive to renew him, Bison’s own power was killing him. He realized his body was reaching his limits but he couldn’t leave Chun-Li and his other enemies free to trash his base so retreat wasn’t an option.

Seeing that her foe’s power was tearing his body apart, Chun-Li eventually stopped trying to launch any direct assaults and wore him down while the damage from his own Psycho Power did most of the work.

In time Bison lacked the strength to do anything besides stand. Refusing to let Chun-Li finish him, he pushed his Psycho Power further than he ever had before. Chun-Li expected an attack. To her shock, this was an attack aimed at Bison himself as he intentionally burned out his own body. Laughing maniacally as his body burned away, he was proud to die standing on his feet and deny Chun-Li the satisfaction of killing him.

Or so he thought. In truth Chun-Li didn’t care if Bison died by his own hand or hers, as long as he died.

Without Bison’s leadership Shadaloo was quick to crumble after its terrorist attacks destroyed its veil of secrecy.

Another idea from The4thSnake’s fix, having Chun-Li kill Bison. Or drive him to kill himself in this case.

Ryu is the face of the franchise but only Alpha 2 & 3 establish any kind of personal dynamic with him and Bison. Chun-Li having a vendetta with Bison is a big part of her character. On top of this Street Fighter III says that she was the one who brought down Shadaloo so she should have been the one to do so in V.

Hell even if Ryu was going to defeat Bison the game could have at least done more with Bison having tried to snatch Ryu’s body in the past. As it stands, Ryu was just some random character who defeated the main villain because of main character privileges.

The way Bison loses is something else I used from my planned Street Fighter series pitch. Tying into the theme of blindly pursuing power being the path to self destruction, Bison’s insatiable greed means his own malevolent powers bring about his downfall.
