True, especially after Oblivion events Dunmers dislike Imperials and the Empire even more then before.

But why do they despise them more after the oblivion crisis?

Because whole Imperial Legion was sent back to protect capital during the Oblivion Crisis, leaving Dunmers all alone. Add to that the fact that Vivec mysteriously vanished and Nerevarine left Morrowind.
