I actually do it a bit differently by using the most dominant color as kinda greybase cause it saves me the time of recoloring that part ovo

You can just clip all the other layers ontop of it so you don't have to worry about drawing outside of the lineart :3
You can see that she did that in the little part where she shows the layer tab, all of them are clipped to something and I'm pretty sure that is the graybase.

To me personally using a grabase helps a bit too when you don't want any white dots or so inside the colored parts since laying a base with black or grey on white background lets you see uncolored parts more easily due the grey to white or black to white contrast

Greybase is there as a base where you clip the other layers of the characters onto so you don't have to worry about drawing outside the lineart ovo
You can see that she did that in the part where she shows the layers since they are all clipped to something which is most likely the greybase
