SciTwi: Physics? Or something similarly complex and impractical... In fact I do believe that book she's holding says physics on it but I can't see the title very well.
Pinkie: Gelotology... Literally the study of laughter! Or if studying laughter isn't actually any fun for her I somehow see her messing around with advanced robotics (Mad Scientist?)
AJ: Agronomy or Geophysics? Y'know agriculture/earth stuff
RD: Aerodynaics? I can't see any other kind of egghead subject interesting her...
Bestpony: For some reason I'm thinking Psychology. Maybe some Crystallography on the side cos... y'know... gems n'stuff

Symphony of Science is one of my favorite channels on YouTube. I really enjoy the result of mixing science and music, making our favorite scientists singing the hymn of discovery.
By the way, I came up with a list that shows what kind of scientists the girls could have been, based on their interests and personalities.
Twilight Sparkle = Physics (searching for a Theory of Everything)
Pinkie Pie = Quantum Mechanics (you need a crazy pony to understand the craziness of the quantum world)
Applejack = Geophysics (agricultural science is way too obvious and overused, so I had to came up with something different and still relevant with her)
Rainbow Dash = Aerodynamics (another alternative is researcher on physical education or something like this)
Rarity = Chemistry (she can use those knowledge to make her own diamonds and improve her dresses a lot)
Fluttershy = Ecology (do I really have to explain why?)
