it's a WIP to a tutorial i MIGHT make on how i personally make fanfoals. i also forgot to put in that kids in canon can also have their parent's mane color as their coat color or the coat color as their mane color (like with zephyr breeze for example, who has blonde hair like his mother's blonde coat)

a child is just not a mix of two parents, a child can end up looking like their grandparents (like my brother looks almost exactly like my grandfather when he was younger while having our other grandmother's hair color). so pulling colors from the grandparents wouldn't be too horrible. i KNOW people will say 'oh but they won't look like the parents' yes children look like their parents in ways, but not exact mixes or copies.
