Well, ideally you'd shoot with this effect in mind - then the post-production stage is really simple: you remove the saturation on all colors, except the ones you want to keep (I use Lightroom 4 as an editing platform).

Another way to create that technique (on a less professional level, haha) is the colour splash app for smart phone.
