Hm... Zecora said that greed made dragons get bigger, so perhaps Spike wasn't really an adult in that episode, but as big as his desire for stuff. Either that or he's not the same kind of dragon. There's the jerky migratory dragons (with wings), and solitary cave dragons (also with wings). But as an adult, Spike was seen as much bigger than the migratory dragons and a lot bulkier than cave dragons. Of course, the major difference being that he didn't have wings. So depending on which point you want to take, Spike may simply be a new species of dragon. After all, little is known about Equestrian dragons (conveniently)...

I was half on the way to call you a noob and send a link to season 2, episode 10, but dammit! You're right. Even as an adult, Spike has no wings. Or maybe he was not grown up at all, just a teenager?
On the other hand, the teenie dragons in s2,ep21 "Dragon Quest" do have wings. Mysterious.

I think spike is just a different type of dragon, not every dragon species has wings. Which makes makes me wonder, will there be an episode involving the discovery of his own kind?
