I think it's her eyes. They were a lot bigger when she was a kid. Or maybe she outgrew her haircut, but the animators didn't want to change it because it helped audiences identify her as an adult.

Honestly, Aang is what threw me off the most. I mean, why shave your head but not your beard. But mostly his voice. I know puberty and all, but woah. Just a shock to my system. Loveloveloved Sokka. Truly. And Toph, well believable. Neither stoked nor disappointed.
