Yeah, I ended up doing it too.
I was going to make a Kirby comic kind of
retelling each game's story in my own way,
and there was going to be an underlying, overarching
story that Galacta Knight was Kirby's mother.

That's pretty cool~ I also have the headcanon that GK is Kirby's mom, but my story is probably different from yours, haha~
Basically Meta and Galacta are in love, and Meta wished on Nova for Kirby to be created (meta acts as kirby's father), and when GK is freed from the crystal she was sealed away in, she and Meta finally get married.

Yeah, mine was that Kirby and Meta Knight we're brothers,
and with Galaxia having the Copy ability, she was targeted by Nightmare,
and he tried to corrupt her, and she became terrified of the pain
she would inflict on others, (Most of all her sons) and sealed herself away by Nova.
Though, Yours is just as, if not cooler. (at least in yours the father isn't a mystery.)
