I think Rainbow Dash would be a great Anakin. Daring, rash, a brilliant flyer -> the perfect fit!
Yoda would be Zecora, considering the rhyming.
Master Windu... no, nopony of the Mane6, he hasn't enough screentime. Maybe Lyra or Colgate?
Padmé... that's hard...let's skip her for now...
I always pictured Twilight as Luke.
Celestia, as her mentor, would be Obi Wan, but wouldn't that be a bit overpowered? And I can't imagine her and Rainbow fighting alongside each other... Maybe Derpy?
Han Solo? Let's make him Fluttershy, with Angel as Chewbacca. Or AJ?
With AJ as Han, why not Braeburn as Lando?
Leia can be Rarity. Or Fluttershy, if she isn't Han.
Back to Padmé: If Fluttershy was Han, we'd only have AJ left as her. Or Rarity, but then AJ was Leia... Ok, AJ is Han and Fluttershy is Padmé.

So Twilight and Rarity are the children of Rainbow Dash and Fluttershy, and AJ and Rarity are in love... Does that make sense?
