Trying to get a better understanding of shapes and volumes, I thought it would be helpful to get back to sculpting for a bit

Oh, wow. I'm not really much a fan of Griffons, but this sculpt changed my mind. What a lovely piece, from the expression to the muscles and anatomy.... A most excellent creation!
