So, I made this one cause of !lissyclay's commentI do not know if it will be useful to you, I personally think that
Adobe Photoshop and Gimp are quite familiar, so if you know
how to do tricks in one, then you know what to do in the other.

I elipse selected the eye I was coloring and when I colored it it just ruined it and the eye was covered up

you have to paint on a new layer!
original pic -> select the eye part
create a new layer -> paint the eye
change the opacity mode of this new layer to whatever you like: multiply.....etc.
