Does the extra gems have any...interesting qualities besides a possible monetary value?
I am guessing it could be turned into some kind of Dust Steroid or enhances certain weapon functions of Huntsmen and Huntresses.

Initially, the gems are nothing more than a means of display and intimidation. Komodusk Grimm only have two eyes, but the gems give the illusion of three other pairs lining its skull. Thanks to the extra "eyes", the Grimm appears alien in nature, even when compared to other grimm, and this unnaturalness adds to the fear factor it already possesses.
Because the beast is so ancient and rare, there haven't been many studies on it. The most popular theories are that the crystals enhance the firepower of its breath weapon, as if having somehow learned how to handle dust and weaponize it just like Huntsmen have, or that it enhances its durability and healing during and after battle, making it more of an unstoppable juggernaught than it already is. Unfortunately, no one knows for certain WHAT exactly the gems do.

Ah yes, it does have an interesting concept...which I had guessed as well. It does make sense when I think about it.
And it does look like a komodo dragon.
