"On the contrary. It's a free country, and I, the great and powerful Moondancer, can do whatever I want. That means going as the best princess. Why care about the moody princess of some dusty old rock, when you could bask in the awe-inspiring radiance of the Sun?"
"But 'moon' is right there in your name, you butt! You only like Celestia 'cause she's the strongest!"
"Maybe. Nopony likes Luna."
"I like Luna!"
"Let me clarify. Nopony important likes Luna."

Cadence is super underrated.
I think the reason for it is that she (like applejack) has no more need for character development, seeing how she's the most mentally/emotionally stable princess. But unlike AJ, she has no one to play the straight-man to.
The older I get the more I appreciate her.

My guess is that moony likes Celestia cuz she’s powerful and can basically smite you in one hit, Pandora likes Luna cuz she can relate to her feeling alone misunderstood and unwanted as well as an outcast, Cupcake likes cadence because she just wants everyone to get along and for there to be peace which could lead into her wanting to be a guard.

I think Cupcake likes Cadence due to their similarities. Besides the obvious "both our name's start with C's" lmao.
-Cadence has a strong love for her family, much like Cupcake does to hers.
-Cadence is loyal to her duties and subjects and does whatever she can to protect them. Sounds like Cup' again ~
-Cadence accepts others for their differences. (Much like Cupcake does with Panny)
-Cadence cares about the safety of others, much like guard ponies do for Equestria's sake
I feel like there's more but, those are just a few ideas for why Cuppy chose Cadence ~

As for the reasons
Moondance-Wanted to be dressed up as the most powerful.
Pandora-Luna is the cool aunt that builds giant pillow forts with her on the moon.
Cupcake-She just wanted to feel pretty.

Moondancer dresses as Celestia because she’s the strongest pony in Equestria, extremely adept at magic and everybody adores and respect her, something Moony has always wanted.
Pandora is dressed as Luna because Luna knows what it’s like to be misunderstood and outcast, labeled as a monster. Panny relates to her as they both have high expectations to achieve and they’re both hiding in the shadow of somebody “better” than them, more respected and more adored (Celestia and Twilight).
Cupcake is dressed as Cadence because they’re both strong, compassionate and caring for others. They both tend to put the needs of others above their own. I can see Cupcake idolizing Cadence and wanting to be there for her family and her friends.

MoonPie might like Celestia...
Because she's the embodiment of power and life.
To someone who wouldn't know Celestia personally, she would seem to be aloof and distant (only goofy and well-meaning once you're close enough to know her). From a distance she is grace, she is elegance, she is the mightiest of all; she literally controls the sun! Without the sun no pony would see the shimmering bright day, crystals wouldn't cast their rainbows, warm beaches would be deserted, rainbow wouldn't shine, fires wouldn't warm dreary winter nights, crops wouldn't grow. Without the sun to lead the moon, there wouldn't be time at all! MoonPie likes Celestia because she is seemingly "above all" and "perfect". Moony has yet to see that the love she carries for all those around her gives her the immense strength she needs to bring about the harvest and control the sun. That she has learned difficult lessons and suffered great heartache over the last millennium, and is still recovering.
From outward appearances... Celestia is perfect.
Pan-demonium might like Luna...
because she understands what it's like to be different. Even though Ponies are a colorful bunch they aren't very welcoming of newcomers.
"Pan-ic isn't just any new-comer, she's a ROYAL new-comer. A "freak" like Pan-demic is expected to help run Equestria? What would she know about that? She's hardly a pony at all!"
These words echo the sentiment and dismissal that Luna once felt (and still feels).
Cupcake might likes Cadence...
because Cadence can emote well. Where Cuppy seems to struggle finding the right words to express herself, she's learned that there are many types of love. Love doesn't need to come from sappy words or gushy love letters, love can come in forms of comfort, in baking, in giving gifts, in protection. Cadence helped Cuppy understand different forms of expression.
Just my thoughts, hope they aren't intrusive.

Moondancer chose Celestia because he wants that power and respect that she has. She’s connected to the sun, and is immensely powerful, not to mention that most ponies in Equestria admire her. Moondancer (*cough most definitely not desperately cough*) wants that power, and that respect from other ponies. ((Also he pulls the look off quite well–))
Pandora chose Luna because they were both misunderstood and feared even though they have quite a bit of power and good intentions. They were cast out and set apart from everypony else. Luna was feared and shunned by ponies, cast into her sister’s shadow; Pandora was feared and teased by her peers due to her odd looks and powers. ((Plus Granny Coco — I mean, Cosmos is on the moon))
And Cupcake . . . Hm. Cadence isn’t quite like the other two princesses. I can imagine that although she was prepared to inherit the Crystal Empire, not many ponies expected a lot from her. She’s not connected to a celestial body and doesn’t have the same sort of power as Celestia and Luna - however, she harnessed her inner strength and rose as the princess of the Crystal Empire, earning the admiration and respect of her subjects. Idk I tried
