I'm just getting started with plushie making, and I've been wondering, why do some folks use the blanket stitch instead of sewing it and then turning it inside out when done?
Also, this gingerbread man is adorable!

To be honest, this is the only plushie I've made so far (although I do plan on making more).
I think it's a number of reason. One being aesthetics. It just depends on how you want your plushie to look. Another being whether or not you have access to a sewing machine and thirdly it depends on what you're making. If it's quite a small plushie, it's easier to hand stitch round the outside rather than fiddle with tiny things on a sewing machine. Also, to be able to sew it and turn it inside out, you have to have a bit that isn't sewn up all the way.

The blanket stitch is a decorative stitch. You can turn it over and you'd only see a little line for a stitch. But generally, this stitch is used for plushies or decorations you want to show off the stitch. Let's say a voodoo doll for example, is the easiest example for it. Or it can be used in plushies' clothes too or anything, but generally is to show it off

You're welcome! It's really one of the basic stitches and a really good one to know. And it's really easy actually, once you grasp the idea.
