Description Minor Edit: I would like to have to thank each and every one of you for each and every on these cakes. But I do not have the time - I've just started university, and I'm fortunate enough for these to have become extremely popular. I cannot spend all my time clearing out the favourites! So please, accept my heartfelt thanks NOW. They wouldn't be doing so well without you. I wouldn't have the DD without you. So thank you.

EDIT 3: Given that the main query I get concerns the icing, and that it's a question I can't help much with, I'm very glad that somebody has found a good tutorial on how to make chocolate-fudge icing! EDIT 2: Oh my gosh, thank you for the Daily Deviation! I just saw that I had a comment- and fav-spam in my box, started to get suspicious, and went to check the DD list - and there it was! I'm really honoured, and I hope that it's useful to lots of you out there. Many thanks to Nyiana-sama for the suggestion and FantasyStock for the actual DD.

Whew! That took a long time.

This is the tutorial I made to accompany my birthday cake lutra-gem.deviantart.com/art/C… which so many people liked. I really do love all you guys, and you make me feel a better artist. Anyway, VERY large file I must point out, I'm going to try and make it so you click the download button to the left of your screen to see it.

EDIT: I would like to say thank you hAtObAaKaQuAy for correcting me; the characters on the side are actually katakana, not kanji.

I apologise if anyone thinks that this is in the wrong category, but the only food and drink related tutorial category was in the Non-art gallery, and that pissed me off, as this is art. So I stick it in paintings since it's just painting with a different medium.

I hope that this tutorial is of some use to you, and I apologise for any mistakes I have made in the writing of this; I'm afraid that if I make a mistake I have to type the whole thing out again once I've left the editor, which sucks.

Did (I quote) "Master chief dukin' it out wif the white ranger from the original power rangers....." This gal's bro ate the cake before she could photograph it. So that sucks. But she says that this tutorial DOES work using frosting/icing. She also says to make sure you have the colours you want for it ready made, especially the black.

Abbreviated Tips from people who have used it:
On the Icing
yumesenpai : Don't use Glace Royal/Royal Icing because you can't put the pin holes in it and it's hard to work with. It might work if you left it a day to set.
On the Colours
icantthinkofaname-09 : Even better than baker's chocolate is Wilton melting chocolates. They're little chocolate discs that you can heat up in the microwave, so you don't need to use boiling water. They taste good and they make a really even consistency. www.deviantart.com/users/outgo… They also make all sorts of bright colored 'chocolates' (these ones taste like vanilla), so you don't even have to stick to chocolatey colors if you don't want to.
Absolutley-Delish : White chocolate with food dye makes better colors is what I've found to work better. It's hard to make it just right.But this does work really well for batter like in white chocolate rainbow brownies or cake.
YellowDaw : I have one more tip: if you don't have the "colored chocolate" you can also add food coloring to white chocolate to make different colors. I think it might depend on the food coloring. I once colored white chocolate with Wilton's color paste and it turned out fine. I think with chocolate you should use either paste or powder colors -liquid colors might make the chocolate grainy because they contain water.
Zanreo : Don't melt more chocolate than you need. You don't actually need that much chocolate(especially if you have a small picture) and it's better to melt more if you need more, than melting more than you need - that's just a waste of good chocolate.

Those aren't kanji, they're katakana. And the last single stroke should have been rotated by 90° if you write downwards.
Huh, sorry. I'm being a wiseass - your cake is gorgeous and the tutorial is really well done. I'll definitely keep it in mind for future baking purposes.

I know, I think someone corrected me on the original cake but I don't think I changed it here. I did it back when I was still a complete newbie to the Japanese culture. And I didn't know about the rotation - that's really interesting! Unfortunately not something I would have worked out from the horizontal writing in the anime I copied it from.

If I redo the tutorial, I will try to use the correct terminology.

About the rotation - that single stroke indicates a long vocal, it's not a "letter" by itself. That's why.

Well, my mom didn't like her original recipe for fondant, so she found an edible recipe that actually tasted good. So she made that and everyone's loved it so far.

It is very time consuming. And I know I usually start thinking about my design at least two months in advance, before usually changing it entirely the day before.

It's chocolate-fudge icing, which I'm afraid I couldn't tell you how to make - my mum does the cake itself, and doing the icing is completely beyond me. However, any stiff icing should work as a base - marzipan, fondant... I think. Apparently regular glacé icing works too, but you need to melt a little butter into it to help it set. You also might need to put it in the fridge for a little while if it goes too squidgy.

I did ask her if it was practical for me to explain it to people, but she says that it's quite difficult simply because it involves handling hot, heavy fudge in pans, and also it's hard to get the texture right. However, if I do persuade her to show me and I make a tutorial, I will post it up here. If I can, I'll try to find this comment to update you, but I can't guarantee it.

Might want to do the following:

Dot the paper on cardboard BEFORE putting it down on the cake.

Then lightly sift icing sugar to bring out the pattern on the cake itself. You can also layer designs.

This also works when transferring designs to any edible surface... so you're not leaning on it/breaking precious layers of chocolate.

That certainly is a good suggestion. Is it something you've tried before and know works? I'd be worried that it would spread too much, or not go through the holes properly.

Yep, my mom used it several times to transfer patterns to cakes.

You can also see them use it on Ace of Cakes, and several how tos about transferring designs to pumpkins before carving them.

Tip: just use a pin or a large needle, make the holes nice and clear.

Put paper on top of cake, shake sugar. Powdered sugar falls through holes, leaving design behind.

That is a question I have asked my mum, and she says that if you add food colouring to white chocolate it goes all lumpy and breaky, and it doesn't work. However, once you've done the transfer I know that using regular icing with food dye works fine. I hope that's helpful!
