DO NOT STEALI have no idea how or why, but it took me nearly 4 hours to make.
The hoof that I fixed looks really weird now, but...oh well! haha

This really helped I just have one question,When I click a point it sends the line out in both directions.How do I change that?

Thank you so much for adding this tutorial...I have been looking for something like this for a while, I just end up using the background eraser to remove things from pictures...this will save me many headaches..

Yeah, no problem. I used to use the eraser too, but it seems this is a much faster way, once you get used to it. I know if I tried to use the erase again, I'd do a crappy job. Haha

Yes it works wonders. I also found a good program for masking out hair..[link] it makes it much much easier to get all the little strays and everything.

I have elements 7.0, that doesn't have a pen tool, does it?

I think it might. But you can just put your cursor over the tools on the side bar so that the name pops up...but I'm not sure if it's exactly called the pen tool on that version..
