Yeah, I never understood why they changed the symbol on Grunkle Stan's hat. When I first noticed it, I thought it was kind of an odd decision. I mean, if they wanted the symbol to look different, they could have had a more logical transition rather than just dropping it in sporadically, like if the old one got old and beat up and Stan decided to replace it.

They changed it at Boss Mabel episode, and the goat eat his fez in the credits. So he changed it. Logical.

At first, I thought maybe it was another secret or mystery clue, like each episode that involved a fish hat instead of a crescent moon hat would be significant somehow, or vice/versa, but them it became permanent. Weird.

I considered that idea, as well. I also thought it was a reference to Pac-Man as a nod to Disney's Pac-Man and the Ghostly Adventures TV show. But, like you said, when it became a permanent design choice, I thought it was a little odd.
