I've got to try that. Is it just a matter of desaturating the colors a bit, or do you pick them right "out of the box" so to speak?

out of the box.
I make little palettes of a lot of my favorite colors (and color schemes for specific characters) What you can do to, is put down the base colors and then play with the saturation and hue adjustments. Then go back on the same piece and use a mix of the original colors and some of the new modified ones.
You get some cool shit that you never would have thought of before.
