That sounds awesome. I can just picture Tarkin going over the restructure of the Republic Forces, into Imperial Forces.
Or Edo Cordova talking about the legends of Revan, the Exile, Bane. Basically all the stuff from over a thousand years ago.
Here's a few of my own intros. I'm going to omit the details and just focus on the words, because I can't think of any new moves.
Master Luke: You couldn't get through to Ben could you?
Rey: I thought I could be like you, that I could save him like you saved Vader.
Master Luke: We can only be ourselves Rey. We don't need to be like anyone else.
Kylo: The first Skywalker.
Anakin: That honor belongs to my mother. No one else.
Kylo: It's not her story that made the Galaxy quake. Or the Legend I grew up in the shadow of.
Yoda: Far from home, your little one is.
Din: Can you help me find it?
Yoda: Hidden, our homeworld is. Must see if worthy of the secret, you are.
Han: Son... Was I really, that big of a disappointment?
Kylo: ...No. But this path, it's only one that's mine.
Han: It's destroying you!
Revan: My past, come to judge me?
Darth Revan: Come to see if your resolve remains steady.
Revan: It does, free of your sadism and schemes!
Kyle: Why do you sound so weird?
Revan: Your one to talk, Katarn.
Kyle: This is going to annoy me.
Ruby: I'll let you pet Zwei if you let me pet Chewie.
Han: Tempting. But I don't think my pal will survive the attempt.
Ruby: Nothing will stand of the way of snuggles!
Dooku: A fellow duelist, as well as a fellow noble, I see.
Weiss: Titles aren't what make you noble, Count.
Dooku: That we will have to disagree on, my lady.
Thrawn: The disobedient pilot cadet.
Han: You Imps didn't know what you where throwing away.
Thrawn: Indeed. Sadly, your far too much of a lost cause now.
Han: Why'ed you drag me here.
Thrawn: I'm interested in an acquaintance of yours. The Cyborg
Han: Valance?! Oh your gonna have to pry that outta me. Don't need him on my tail too.

Good intros. I always appreciate a good voice actor joke.
As to that "Galaxy of Star Wars" idea, I can think of no better place to start than where George Lucas did: with the climactic end of the first-ever Star Wars film.
GALAXY OF STAR WARS: THE BATTLE OF YAVIN
Narrator: Mon Mothma
It's been said that a single spark of courage can ignite the embers of hope. In the case of the Alliance to Restore the Republic, it's no different.
From the beginning, the Alliance had constantly been on the defensive against the tremendous military strength of the Galactic Empire. While we claimed small victories here and there, it mattered little in the long run. Even our major victories, such as Kamino, Fresia, and Turkana, did little more than to prolong the survival of the fleeting Alliance. That all began to change, however, with the battle of Yavin.
The battle was set by the Rebellion's ambitious plan to destroy the Empire's ultimate weapon -- the Death Star. A battle station armed with the firepower to obliterate a planet. Depending on who you ask, we first learned of the weapon one of two ways. The first is my timeline, where the secret apprentice of Darth Vader rescued the leaders of the recently declared Rebellion, myself included, from the under-construction Death Star itself -- at the cost of his own life. The second timeline is where Rebel operative Cassian Andor learned of the weapon from one of its chief engineers, Galen Erso, through an Imperial defector named Bohdi Rook. There are other potential timelines, but those two are the ones most seem to consider the major avenues. Both cases led to the Alliance stealing the plans to the station, as well as to the same stage: Yavin 4, the location of the Alliance's secret headquarters.
Princess Leia Organa of Alderaan was entrusted with delivering the plans to Yavin 4 and to the Alliance High Command. Before she could, however, her ship was seized by Darth Vader, who brought her to the station as a prisoner. Fortunately, the Princess had the foresight to store the plans in the memory banks of her personal astromech droid, R2-D2, who, alongside his protocol droid companion C-3PO, fled the ship in an escape pod to the planet of Tattoine. From there, a series of events would lead to a young moisture farmer named Luke Skywalker delivering the droids to Yavin. By his side were the smugglers Han Solo and Chewbacca, who transported them in the freighter Millenium Falcon, Princess Leia, who they rescued from the Death Star, and exiled Jedi Knight Obi-Wan Kenobi, who tragically sacrificed himself to allow his allies to escape from the station. The plans revealed the Death Star's weakness: a small thermal exhaust port that led to the station's main reactor.
Unfortunately, the Falcon's crew realized too late that they were being tracked by the Empire. A homing beacon placed aboard their ship soon brought the Death Star to Yavin's doorstep. Intent on wiping out the Rebellion once and for all, Grand Moff Wilhuff Tarkin personally brought the station into the system. The Alliance's pilots scrambled to stop the station before it could destroy Yavin 4 -- and the Rebellion with it. Many brave pilots gave their lives in the ensuing battle, both to Imperial TIE fighter squadrons and the Death Star's many turbolaser batteries. In the end, however, Luke Skywalker once more proved himself by firing a miraculous shot into the exhaust port, destroying the Empire's greatest weapon, killing Tarkin, and saving the Rebellion.
Though the Empire would soon drive the Rebellion from Yavin 4, the blow they had been dealt had shown the galaxy that they weren't invincible. Around the galaxy, between the Death Star's destruction, the wanton destruction of Alderaan, and the earlier dissolution of the Imperial Senate, star systems announced their support for the Alliance and took up arms against the Imperial forces, catching many Imperial governors and Moffs flat-footed and making the Alliance into an even greater and more credible threat to the Emperor's rule. Tarkin's demise, as well as that of the Imperial generals and admirals who had been aboard the station, also sent shockwaves through the Imperial military structure that they never fully recovered from. The battle of Yavin was more than a battle for the survival of the Alliance. It was the event that showed the galaxy that the Rebellion was a force to be reckoned with and that for all the Empire's resources, armies, and Starfleet, it had been found wanting against the Alliance's courage, resolve, and camaraderie.
It's said that a single spark of courage can ignite the embers of hope.
For the Alliance, Luke Skywalker was that spark.

Very cool. You should put that in a fanfic. Like at the end og chapters to give Lore to the readers.
Speaking of voice actor jokes.
Joker: I feel we are of a kindred spirit, my boy.
Luke: I assure you, we have nothing in commen.
Joker: Trust me. I'm never off the mark.

BTW, here's another example I have in mind with that "Galaxy of Star Wars" idea.
GALAXY OF STAR WARS: FORM I: SHII-CHO
Narrator: Cin Drallig
Throughout the history of the galaxy, civilizations have risen and fallen. Jedi and Sith alike have found themselves coming to power and falling into distant memory just as often. However, there has long been one constant. The lightsaber. The weapon of the Jedi Order and their dark counterparts in the Order of the Sith Lords. Throughout its long history, the lightsaber has proven itself as more than a mere tool -- its use is a subject of scientific study, as well as an art form for those talented enough to wield it. So much so, in fact, that seven forms of lightsaber combat were developed throughout the ages, each with its own strengths, weaknesses, and history.
The seven forms are as follows: Form I: Shii-Cho, Form II: Makashi, Form III: Soresu, Form IV: Ataru, Form V: Shien and Djem So, Form VI: Niman, and Form VII: Juyo and Vaapad.
Let us discuss Form I. Shii-Cho, as it's called, is the most ancient form of lightsaber combat in history, as well as the most basic. Developed during the transition period from swords to lightsabers, Shii-Cho incorporated many techniques and maneuvers as the key principles of swordplay flowed seamlessly from metal blade to saber. Attacks, parries, and body target zones were all interchangeable from the two types of swords. This simplicity and persistent methodology of Shii-Cho led it to be dubbed "The Way of the Sarlacc" or the "Determination Form." Soon, it became the form every Jedi youngling learns from the beginning of their training, providing basic knowledge of sword-fighting principles and blast deflection skill that is required for the practice of all other forms.
Shii-Cho is exceptional at confronting multiple opponents at once, with its wide, sweeping motions being ideal for attacking numerous adversaries effectively and efficiently. In the hands of a master like, say, Master Fisto or Master Yoda, the bladework is like watching water flow over the falls. However, I have seen less adept practitioners display much more basic and somewhat clumsy performances with this form. The form is wild in its base nature, raw, deadly, and difficult to control its pull in a way that disables opponents rather than killing them.
What's more, the form is notably ineffective in lightsaber-to-lightsaber combat -- an ineffectiveness that eventually led to the formation of Form II, Makashi. In addition, while Shii-Cho is effective against multiple opponents, single opponents are far more effective at countering the form. This is due to the complete mobility single opponents tend to have against Shii-Cho's comparatively clumsy bladework, leading to them finding a weakness before exploiting it.
That said, Shii-Cho should not be underestimated. Every Jedi and Sith, at some point, have intermixed this form with their own preferred styles. And, again, as the most basic of the forms, Shii-Cho is the one every lightsaber-wielder must be able to use if they ever wish to master any of the other forms.
Even then, Shii-Cho's effectiveness lies in its simplicity, as many a master of the form can attest, myself included. I suppose it's true what they say. Sometimes, the most simple methods...
...are the most effective.
(End episode)
I imagine Cin would talk about lightsaber forms in the same way Qrow talks about Remnant's Kingdoms -- with one episode dedicated to the form's history and features.
I also imagine the following narrators for each topic:
Rebel/Legends New Republic Topics: Mon Mothma
Imperial Topics: Tarkin
Republic Topics: Bail Organa
Clone Topics: Rex
Separatist Topics: Nute Gunray
Resistance/Canon New Republic Topics: Poe
First Order Topics: Hux
Legacy Topics: Marasiah Fel
Ancient History Topics (Both Legends and Disney Canon): Eno Cordova
Lightsaber Forms: Cin Drallig
Starships: Ackbar
Planets: R2 and 3PO
Anything you can think of that I missed?

That all sounds good. Good choices for the narrators.
Since you brought up Lightsabers. I wanted to share some... out there designs I've cooked up since seeing the concept art for the Sith pike in the Darth Bane episode.
It got me thinking that the shape of the blade is determined by the emmiter and the stranded variation we see throughout the series, is the most popular due to how multi-functional it is. But more exotic shapes like the Darksaber and aforementioned pike for those more individualistic or skilled enough to use them.

Ah, Mark Hamill. Everybody's favorite Joker.
That's a good idea, BTW. If I ever publish this, I hope to hope to have "Galaxy of Star Wars" chapters like this in between the main story.
Also, you know clashes in Injustice 2, right?
(Galen's lightsaber meets Vader's)
Vader: You will be destroyed by the dark side.
Galen: You won't scare me that easily, Vader!
(Galen breaks the clash before Force Repulsing Vader away)
(Obi-Wan's lightsaber meets two of Grievous's)
Grievous: You are doomed!
Obi-Wan: Oh, I don't think so.
(Obi-Wan breaks the clash before unleashing a series of spinning slashes at Grievous, the last of which sends him skidding away)

As I understand it seeing the future is only a Jedi thing. Reason being it kind requires calmness. So sith are basically to angry to get visions of the future. But I might be wrong on that my only reference to this is Star Killer, a Sith who decided to stop being a sith.

I’m not sure, though I do know that losing parts of your body lessens your overall connection to the force. Hence why Vader and Clone Wars Maul were considerably weaker than their previous selves.
