Whelp this question has a world-building answer, In my headcanon Alicorns are perfectly able to reproduce with ponies of the same sex (and have actually been doing it for a while). They don't do this through genderbending (which is dumb) but through some biology altering magic (they are able to age ponies and change their physical genders according to the powers of the Alicorn amulet so it's not hard for them to manipulate a couple of chromosomes), however, this reproduction method was always reserved for Alicorns and they rarely used it, but some time after Flurry Heart's birth princess Candance started offering a selective service for two ponies of the same gender to bear a child (she had to make the service very selective, as to not diminish the amount of ponies adopting or to avoid overpopulation in Equestria) this service was also used by ponies whose partners were a different race (only other civilized and sentient races) but still keeping it very selective. In twilight's case she managed the whole affair herself on both cases and spent weeks perfectioning the spells with Twilight being the one to bear Eventide and Sunset bearing daybreak.
