Well, seeing He is a very large Preditory creature that ISNT human but evolved into a human like creature from a totally different path, He could quite easily be a man eatter. Its not like it would be taboo for him, since its not Cannibalism.
BUT, I think Cyclopses would only eat people if they tresspass on their territory without asking permission or there were no other food sources available meat or cheese wise at the time -- Most animals refuse to eat humans unless sick or have no other real choice because we are preditors ourself and taste pretty nasty to them.
