Why won't they use casket mags! They were invented in the early 21st century.....

Preference. The Type-103 uses a quad-stack casket magazine, as does the K-45 series.
Much in the same way that although casket magazines have been around since the mid- to late-20 century, very few weapons or militaries ever used them.

The Tommy had drum mags, they were almost never used in combat.
The M16 had drum mags, those were avoided at all cost.
I think it's time to put all my money on the side that actually uses them.

I have to say that when I look at each of these things now, they almost seem to change into whatever weapon a particular part reminds me of.

I completely get what you mean. Like, I'd base a receiver off of a particular gun, and then no matter what I do to it, I only see that gun.

If I look at say, the front of the PZ-03C, I see an ACR and UMP. Stock and lower receiver, MP5 and G36. Magazine is any modern Kalasnikov or similar, and makes me view the thing as a whole as an AKU. Of course, it is inspired by that gun in particular.
