It's a bit of a irreverant poke at my religion.Catholic believe that the Eurachist becomes, literally, Christ. And we eat the Eucharist, and the icthus represents Jesus...so there you have it, sushi.

Hahaha. I agree, you can have religious humor to a certain extent. We should know though that we shouldn't use it to the point where it outright disrespects, judges, or puts down the beliefs of its members or to God.
I look at the art pic like just as we eat food like fish for bodily nourishment, and so we Catholics consume the flesh of Christ for spiritual nourishment and salvation. (John 6:54). So yeah, in that sense I like it. 
On a side note I thought the fish symbol represented the followers of Jesus (the apostles and followers were called "Fishers of men"), not Jesus himself. Though I heard that the greek word for fish, ichthus, is often translated as "Jesus Christ" in english yet I don't know the accruacy of that.
