I think it's more like anime characters look more and more cartoony and generic all the time, like they all have the same face with no nose or defining characteristics whatsoever

I don't think so. I believe his name was Denim, he was the second Zaku pilot to be killed by Amuro after his psychotic teammate Gene. He got killed when Amuro rammed his beam saber through his Zaku's cockpit.

IDK they look very different to me. Of course I rewatched the movie trilogy recently. But Yas is pretty good at designing characters that have unique facial features and are devoid of sameface
