The thing I kinda wonder sometimes is why all these alien races have such different looking ships? I mean... in-universe reasons. To distinguish themselves? Culture? Technology?

As you surmised, at least in Star Trek, ships appears as an expression of a culture's level of technological development.
Star Wars on the other hand is a galaxy spanning culture with only a handful of spacecraft manufacturers for anyone who can pay for what they produce.
