Yes and no since they can resemble either a Male or Female and apparently the true name for the Kai's Race isΒ The Core People but it only gets stranger from there since Core People are born from magical fruits that grow off of theΒ Kaiju .

The East Kai yes She only appears in the Anime and is never mentioned in the Manga only North and South are.Β But technically the title of East, South, &Β West KaiΒ areΒ canonΒ they just weren't shown in the Manga. GrandΒ KaiΒ is filler as is the whole Other World Tournament arc so we don't know if there's a headΒ KaiΒ at that level or not but it is worth noting that Piccolo does mention Grand Kai in both the Anime & Manga. Also I'd like to point out that the West Supreme Kai is canon She was in both the Anime & Manga.
