Know one thing that keeps me from it? Knowing everyone else already has years of experience and I will never reach their level of skill or it would take me years too, so that I can make things like them that I admire. That's the perfect motivation killer right there.

It's a really long learning journey for sure, but as long as you are willing to learn and improve, you'll reach that end stage someday. When I started out, I worked on a number of projects and scrapped them all before making a video worthy of uploading. My motivation came from wanting to reach the level of big time pony animators like Argodaemon (who already has years of experience before I even started). That being said, I'm still learning new things to this day, so it's really more of a nonstop journey of self-discovery and improving on skills.
You just have to take that first step. No one is expecting you to produce top tier stuff for your first time. Maybe you can try making a simple poster of your favourite ship for starters, and see where that takes you

That's the start of the problems already though. There are so many variants by now, I have no idea what to use.
Is there anyone that combines all the new features that came along with time? Like, I remember there were improved eyes or something a while back, then there's these wings you have here... what about NSFW models, are these the same just with genitals? Or are they based on old versions of the models.

Just use these:
They are pretty much the latest and most upgraded Mane 6 models.
The new wing models are only available on Rainbow for now, and they are a little harder to use, so I recommend you just stick with the ones above.
About the NSFW models, there are separate models for the _bits_ and you join them with the pone model in SFM. So you can just use the most upgraded pone models, and lock the _bits_ into place.
