Alright, so let's just ignore the fact that this is a kid's show with a bunch of talking fucking animals and analyze this situation in a more relevant, personable manner.
SO YOU HAVE THIS ONE FRIEND. You really like her. She's very much in tune with nature, but incredibly sensitive. In fact, she's so sensitive she secluded herself in a cabin away from the town so she could live with only animals. Despite her hermit-like behavior, she is easily one of the NICEST PEOPLE YOU KNOW.
THEN SOME ASSHOLE SHOWS UP. Ignoring the fact that she is a fucking griffon, let's just make her some 6'5" fucking leather wearing fucking motorcycling "look at me wrong and I'll fucking break your arms" kind of person.

So your really nice, really shy friend goes into town and runs into this fucking giant prick. She meant no harm, she just wanted to go about her business.
Ok, so let's just acknowledge again that Gilda is a griffon, and roughly 3 times the size of Fluttershy... more than capable of killing her. Easily. By roaring at Fluttershy, she is making this fact very, VERY evident.
SO YOUR FRIEND RUNS INTO THIS ASSHOLE. And what does the asshole do? SHE PULLS A FUCKING GUN OUT, AND POINTS IT AT HER FACE. "Hey, fucker, GET OUT OF MY WAY OR I'LL BLOW YOUR FUCKING BRAINS OUT", she says, brandishing an audacity only available to those strong enough and with access to guns.
I like Gilda as a character, she allowed us to see what Rainbow Dash was like before experiencing the magic of friendship etc
BUT HOLY SHIT DO I EVER HATE HER because she is SUCH an asshole!!! She straight up threatened to murder Fluttershy!!!

But we are not talking about humans here! Talking Animals try to eat echother all the time.
So let's look at it from a Griffon's POV ( yes, we are not going for the "Predators are Mean" trope here )
You happen to be one of "those" Griffons. Ignoring a natural instinct and having a relationship with what other Griffons would eat. ( Which according to Legend only occurs when love is involved, and no, there is no cure for that. Also keep in mind that your kind mates for life )
Due to the fact that she lives alongside others of her kind and they are all vegetarians, while you are an obligate Carnivore ( yes, no way to go vegetarian), you only visit her rarely and only stay for a short time in order to not risk eating someone...or risking your health by eating their food.
So far, it all worked quite well, but at the current visit, this pink mare showed up. Aside from popping in all the time when you want to be alone with your friend, she is also generally rather annoying. All attempts to get rid of her fail. ( And no, you don't plan to kill her, even if you would love to kill her )
All this puts you under a lot of stress. Your friend is away for moment. The ennoying pink mare aswell. You walk aorund Ponyville, all those tasty Ponies around you, but you manage to opress you instinct, eating an apple instead ( you know that this will cause you stomache pain at some point ). You try to calm down, but then that mare runs into you. She kinda reminds you of that annoying pink mare. You tell here that she better watches out where she is goingand let out a mighty roar, signaling that she should not bother you. She retreats. Ahh, silence! Now if only you could spend some time with your friend alone.
The pink mare is back and alongside your friend, invites you to a party. You don't quite trust her, but you go anyway. Turns out it is a trap set by her in order to humilate you. She also has manipulated your friend into helping her. You want to leave with your friend, but she drops you like a horse apple!

It's a very strong instinct in Griffons. They are intelligent, loyal, brave and a alot other positive things, but horses tend to be their natural prey and they have serious problems controling that instinct. Ofcourse if a Griffon would have to decide between rescuing a friend or eating a horse, or other extreme situations, it would rescue its friend. But under normal circumstances, there is only once force able to overcome this instinct and no it is not magic. It's the Power of Love!

The situation is the same.
Expect that they are obligate Carnivores with a natural taste for Horses as opposed to general obligate Carnivores. While the average Joe might normally interact with them like that, there is that instinct hindering them to do that with horses. There is only one power that could cause them to normally interact with horses: The Power of Love.
Oh and you might not think about it, but the food in Ponyville, is pretty much poison for her.

MLP's only other griffon thus far, Gustave le Grand, shows no such tendencies, and in Griffon the Brush Off, Gilda's behavior is obviously taken as being unacceptable by everyone who witnesses it, including Dash. Also remembered a detail about Raptors ( the Birds, not the non-avian Dinosaurs ) : Females tend to be bigger and more agressive. Which probably also holds true for Griffons, given that Gilda atleast seems bigger than Gustave. So she is more likely to not take Pinkie's crap. Yet she does not rip off her head.

- telling everyone Luna is an evil canibal
- the Evil Enchantress Song etc.
- Pretty much all the pranks she played through "Griffon the Brush off".
- RD dropping Gilda like a horse apple.

Both, Gilda and Luna, not being happy, was shown. Main difference was that while Luna wanted to convince the superstitious townfolks that she is not a canibal, Gilda decided to get rid ofΒ Pinkie.
