I'd like a great butler. I'd like to keep my soul for one, however.

I watched the first episode of Kuroshitsuji. We have a boy named Ciel who is an Earl and the sole heir to the Phantomhive family/toy-company empire, a kid who could probably tear you a new one if you doubted his mad skillz. Spoiler spoilers, story, etc, he lost his family in a traumatic event and at which time made a demonic pact and now has The Best demon Butler in the world who will do what ever Ciel wishes, but will take his soul or something when he dies.

Sebastian reminds me strongly of the Bartender from... uh... was the anime called The Bartender? He's calm, he's knowledgeable, he can make you tea and cake, and he's real good at what he does! He can probably even rip off your face and show it to you before you bleed out or go blind from lack of tear ducts. But beyond that, it's a fair mix between light comedy and darker creepy. It's also quite Moe.
