McCoy uses the phrase "in a pig's ear" when he knows Spock is full of shit. So when Spock pretended he didn't have an emotional response to Jim being alive McCoy was dressed as a pig to reference this phrase and also said "oink oink" which has a secondary humorous meaning as a pig's snort. A snort is used to express disbelief. So there are a few subtle elements in this joke.
