Oh please 🙄 First of all, the stories still exist, the only way to “get rid of them” is to destroy every copy which is pretty much impossible in the digital age; secondly, the fact that those stories still exist is exactly why they don’t need to rehash them and instead they can better spending their time creating new and interesting stories

And yet Disney keep "borrowing" from Legends (e.g. Rise of Skywalker stole quite a bit from Dark Empire).

So do you want them to take inspiration from the EU or do you want them to stay original, you can’t have it both ways

If they were original, it wouldn't be so bad, but their not (movie-wise anyway). Force Awakens was just a remake of a New Hope, Rouge One just told a story told dozens of times in Legends, Last Jedi was just an amalgamation of Empire Strikes back and Return of the Jedi, Solo was just a much less interesting version of the Legends books about his backstory and Rise of Skywalker is just a nonsensical version of Dark Empire.
