In regards to your piece: something you might want to try is when you think you're done or not sure about a piece is turn the image to grayscale and you'll be able to see the values and if it's too flat. This helps me out a ton. Another thing, is you just might be too timid with your darks. I know I was for a long time (and kind of still am). Try over-doing the darks and you might get it to where the values don't look flat anymore.
