This is a world where real magic is widely known to exist, right? If that's the case, isn't the whole point of a magic show, showing things that appear to be impossible, lost? Or does the appeal come from seeing extraordinary skill with magic beyond what's generally seen, like what we have with real-world performances of things like acrobatics?

The latter. Like, a teleport spell or a spell that makes something levitate isn't very flashy, the effect just happens.
We all know how fireworks work and what they're doing, but we're still fascinated by the colors.
